Growing grapes on top of Volcanic ash.

You have got to give the people on these islands credit for ingenuity, they have used the disadvantages of Volcanic eruptions to good use. In places the Volcanic ash is a metre to several metres deep, but underneath is good fertile soil, so they dig down to this soil and plant grapevines, the ash protects the grapevines from moisture loss by insulating the soil. There is not a lot of rain in Lanzerote but at night time there is a great amount of humidity which seeps through the ash into the soil and stays there, thus giving the vines moisture all year round. Each half circle of Volcanic stone has a grapevine inside. The walls have also got a purpose and that is to protect the vines from the wind.
